Moving to a new country brings excitement and a delightful challenge: adapting to local cuisine. Here in Austria, bread takes the crown, offering a delectable array of options to explore. Seriously, you could sample a different kind of bread for every meal of the week!
Yet, when it comes to kids, simplicity holds sway. They crave that classic soft sandwich bread that’s tasty, wholesome, and easy to add to their school lunchboxes. And let’s face it, none of us want bread that’s been pumped full of preservatives and lasts longer than we do in the pantry!
I love baking. It’s more than just a hobby for me—it’s pure therapy! Living in the tranquil Austrian countryside has awakened my inner domestic goddess. Something about the rustic charm inspires me to roll up my sleeves and get baking. It’s almost like my love for it has been rekindled after so many years.

Fast forward to today, and I’ve been pulling out her old recipes, discovering treasures like this amazing sandwich bread I’m about to share with you.

The Best Easy Sandwich Bread Recipe
Ingredients
- 2½ cups warm water
- 2 tbsp active dry yeast
- 1 tbsp sugar
- 6½ cups all-purpose flour
- 2 tsp salt
- ⅓ cup melted butter
Instructions
- In a glass bowl, add the active dry yeast and sugar to the warm water. The water should be slightly warmer than what you'd use for a baby's bottle.
- Give it a good mix with a wooden spoon and leave it to foam – about 10 minutes. The sugar helps to activate the yeast.
- Add the flour once the water is foamy, one cup at a time. Mix with a wooden spoon while the mixture is still watery. You can also use a stand mixer fitted with the dough hook if you have one and don't like to knead by hand.I need 7 cups of flour for this recipe as it is humid in Austria. You may need half a cup more or less than the recipe calls for.
- Add the salt and knead through.
- Add the melted butter and knead well.
- Once it forms a dough, knead it for approximately 10 minutes. The dough should be sticky and pull away from the sides of the bowl easily. It's ready when it is sticky but not sticky enough to stick to your finger when you poke it. If it's still a little too sticky, add a little more flour and knead it through. If it's too dry, add just a little more water.
- Once you have the correct consistency, put the dough into a clean, buttered dish. Cover with a clean tea towel and leave it in a warm spot in your kitchen to rise. Usually, it's about 45 minutes until it's doubled in size.
- Once the dough has risen, punch down to release the air.
- Remove the dough from the bowl, roll it out to form a log or long loaf shape on a floured surface, and divide it into two.
- Place the two parts of dough into two buttered loaf tins and cover with a tea towel and allow to rise for 30 minutes
- Preheat the oven to 180℃/350℉
- Once the dough has again doubled in size in the loaf tins, bake in the oven for 25-30 minutes until golden brown. To check that it's done, tap on the top of the loaf – if it sounds hollow, it's ready!
- Optional: As soon as the bread is out of the oven, brush the tops with melted butter and allow to cool completely before cutting. I like to cut the bread while it's still a little warm, but not hot, and enjoy it with some butter that soaks into the freshly cut slice of bread. It's delightful!
I hope this recipe brings as much joy and deliciousness to your home as it has to mine. Embrace the therapeutic rhythm of kneading, savour the aroma of freshly baked bread filling your kitchen, and revel in the satisfaction of crafting something wholesome and utterly delicious. Here’s to many more loaves of homemade goodness and countless sandwiches savoured.
Happy kneading!
