Equipment
- 1 wide-neck jar sterilised
- 1 stick / immersion blender
Ingredients
- 1 egg at room temperature you can used pasteurised if you prefer
- 1 cup light olive oil or avocado oil if you prefer the taste. Extra virgin olive oil is too strong and will change the flavour of the mayo completely.
- 2 tsp Dijon mustard if you don't have Dijon mustard, add a little more of the mustard you have on hand, this can be altered to taste
- 1 tsp lemon juice
- just a splash of white vinegar
- 1 pinch of salt
Instructions
- Place all the ingredients into a jar.
- Immerse the blender to the bottom of the jar and blend from the bottom up for 8 – 15 seconds until all the oil is well incorporated.
- Watch how simple ingredients transform into a creamy, healthy and delicious mayo right before your eyes!
- Taste test! Decide if your mayo needs a little more lemon juice or vinegar.
