For Breakfast or a Snack, It’s Easy to Make a Flapjack
Flapjacks, the versatile treat that can satisfy your cravings at any time of the day. Whether it’s a quick breakfast, a light lunch, or a sweet indulgence, these babies are the answer. Picture this: it’s Sunday evening, and you’re not quite ready to end the day on the eating front. Whip up a batch of flapjacks! They’re the ultimate solution for those “I want something yummy but can’t be bothered to cook” moments. And the best part? They’re so quick and easy, you’ll be able to make a batch of about 12 in just twenty minutes with this recipe. (The recipe can be doubled.)
Let me take you on a journey down memory lane. After a long day at school, I’d rush home to find my Ouma (grandma) in the kitchen, a tower of flapjacks ready for lunch. I’d slather mine with strawberry jam and a sprinkle of grated cheese. For me, it was a flavour explosion! Today, I’m continuing this cherished tradition with my kiddos. Flapjacks have become a weekly ritual, and even my teenager has mastered the art of flipping them. They’re that foolproof. They can be sprinkled with cinnamon sugar, spread with Nutella, drizzled with honey or syrup and added fresh berries. Or, even whipped cream or ice-cream as a satisfying dessert. Merely the canvas for your cravings – flapjacks can go with any toppings you like!
A Jack of all Names
Flapjacks, Crumpets or Pancakes- these beauties go by many names. In South Africa, we call them flapjacks, but I’ve seen them labelled as crumpets or pancakes in supermarkets here in Austria. It’s a global love affair! I’ve tried my hand at all sorts of baking creations, but something about flipping a pancake (or crepe) always trips me up. I just cannot get it right. Flapjacks, though? They’re so easy. No fancy technique is required! I just mix everything in one bowl and I’m good to go. (I even posted a video on Instagram to show how easy it is.)
Cooking the Perfect Flapjack
What sets flapjacks apart? They’re light, they’re fluffy, and they’re downright irresistible. Once you’ve had a taste, you’ll be hooked. Here’s a little tip: When mixing the batter, aim for a consistency that’s thicker than your typical pancake mix but not overly thick. You want it thick enough to hold its shape on the pan but still flow easily. Think somewhere between pancake batter and cake batter – leaning towards the latter. Start with 200 ml of milk and adjust until you achieve that perfect balance.
When cooking the flapjacks, pour about a quarter cup of batter (I use a gravy ladle) onto a non-stick pan over medium heat. It’s best to avoid using oil or butter to cook them. Watch for bubbles forming on the surface, usually after about 1-2 minutes. Once you see those bubbles, it’s time to flip them. Each side should be golden brown. Keep an eye on the heat of your stove; if it’s too hot, the flapjacks may burn, but if it’s not hot enough, they may be undercooked on the inside. Adjust the heat throughout the cooking process to ensure they cook evenly.

Quick & Easy Flapjack Recipe
Ingredients
- 1 cup flour
- 1½ tsp baking powder
- 1 tbsp sugar
- 2 tbsp melted butter or oil
- 1 egg
- 200 ml milk
Instructions
- Add all the ingredients in a medium-sized bowl and whisk together to form a fluffy, thick, creamy batter. Aim to get the batter thicker than a pancake mix – almost more of a cake batter consistency.
- Scoop about ¼ cup of batter and fry in a non-stick pan over medium heat.
- Watch the batter form tiny bubbles, and flip to cook on the other side. About 1 – 2 minutes per side, until golden brown.
- Stack your flapjacks and serve with a topping of your choice.
